It has been discussed many many times before. Its only the hobbits that have a natural defence against the Ring. The Eagles are aware of the power and stay clear of it, like an animal instinct.

They have a resistance to its effects. That doesn't mean they're immune to it, just takes a lot longer for it to affect them than it does to affect a human. Remember Boromir? :mrgreen:
