Cars, yes.
Pushbikes, San Andreas only.
Fighter jets, none so far.

San Andreas most definitely had a fighter jet, the Hydra.

Funny, considering I found GTA IV to be the only GTA that I actually found myself wanting to play the actual game rather than dicking around on a moped for 15 minutes and never playing again.
